I love oatmeal cookies but in this recipe they’ve levelled up to become something much more tasty. Each bite has chewy dried apples and yummy caramel bits. Best of all, each cookie is only 80 calories!
Note: This makes a large quantity of cookies. Make sure you don’t eat them all at once!
Ingredients:
Grandma
- 3 cups flour
- 3 cups rolled oats
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cup sugar
- 1 1/2 cup brown sugar
- 3/4 cup unsalted butter
- 4 tsp vanilla
- 2 eggs
- 1 1/2 cup chopped up dried apples
- 1 1/2 cup chopped caramel candies
Instructions:
- Preheat the oven to 350 degrees.
- In a medium sized bowl combine the flour, rolled oats, baking powder, baking soda, and salt.
- Get a large bowl and add the butter, sugar, and brown sugar. Cream together with an electric mixer.
- Continue beating on medium speed. Add the vanilla and egg. Next, add in the flour and oat mixture 1/2 cup at a time.
- Once everything is well mixed, grab a rubber spatula and use it to fold in the apples and caramel.
- Line your baking pans with parchment paper (you don’t want to just grease them because the caramel will stick). Drop the dough onto the baking pan. Each cookie should be about two tablespoons of the dough. Make sure they’re around two inches apart. Flatten each cookie slightly with a glass.
- Bake for 9 minutes. Cool on pan for 2 minutes and then let them cool completely on a wire rack. Be very careful about eating them while they’re hot because the caramel may burn you.
