Ingredients
For the honey mint dressing
- 2 tbsp fresh mint, finely chopped
- Juice of 1/2 a lime
- 2 tbsp freshly squeezed orange juice
- 2 tbsp honey
For the fruit salad
- 1 cantaloupe melon
- 1 1/2 cups chopped strawberries
- 1/2 cup red seedless grapes
- 1/2 cup green seedless grapes
- 4 kiwi fruit, peeled and sliced
- 2 fresh mandarins, peeled and separated into segments
How to make the honey mint fruit salad
1. Make the dressing
Place the chopped mint, lime juice, orange juice and honey in a small bowl. Whisk until well combined.
2. Prepare the melon
Cut the cantaloupe in half and remove the seeds. Chop into bite-sized pieces, or use a melon baller for a more decorative presentation.
3. Prepare the remaining fruit
Wash the strawberries and grapes. Chop the strawberries. Peel and slice the kiwi fruit. Peel the mandarins and separate them into segments.
4. Combine the fruit
Place all the prepared fruit in a large bowl. Gently mix so the fruit keeps its shape.
5. Add the dressing
Pour the honey mint dressing over the fruit and toss gently until lightly coated.
6. Serve
Serve immediately, or chill briefly before serving.
