Mini chocolate cheesecakes

Cheesecake is hard to resist, but you don’t need to make a full-sized cheesecake every time the craving strikes.

This simple no-bake treat uses chocolate chips, ricotta cheese, and chocolate wafer cookies. A little raspberry or strawberry jam adds a fruity finish.

The original Natural Health Kingdom recipe made six small portions. We kept the original ingredients and basic method, removed the old weight-loss claims, and gave the recipe a cleaner, more useful format.

At a glance

Prep time: About 10 minutes
Chill time: At least 1 hour
Serves: 6 mini cheesecakes

Ingredients

  • 2 tbsp semi-sweet chocolate chips
  • 1/4 cup part-skim ricotta cheese
  • 6 chocolate wafer cookies
  • Raspberry or strawberry jam, optional

How to make mini chocolate cheesecakes

1. Melt the chocolate

Place the chocolate chips in a small microwave-safe bowl.

Heat gently until softened, stirring between short bursts until smooth.

Take care not to overheat the chocolate.

2. Add the ricotta

Stir the ricotta into the melted chocolate until combined and creamy.

3. Assemble the mini cheesecakes

Place the six chocolate wafer cookies on a plate or small tray.

Divide the chocolate-and-ricotta mixture evenly among the cookies.

4. Add the fruit

Add a small amount of raspberry or strawberry jam to each mini cheesecake if you like.

5. Chill

Refrigerate until the filling is chilled and firm enough to serve.

Easy variations

The original recipe is deliberately simple, which makes it easy to adapt.

Try another fruit: Use a little berry preserve or another jam you enjoy.

Change the chocolate: Use dark or milk chocolate, depending on your taste.

Add fresh fruit: A few fresh berries make a simple finishing touch.

More chocolate: Add a light dusting of grated chocolate before serving.

Make-ahead

These mini cheesecakes can be prepared ahead of time and kept refrigerated until you are ready to serve them.

Because the recipe contains dairy, keep the finished desserts chilled and follow normal food-safety guidance for refrigerated foods.

A small dessert can still be satisfying

You don’t need to turn every dessert into a “diet” food.

A small homemade treat can simply be a treat.

The original recipe was presented as a way of enjoying a chocolate craving while trying to lose weight. We have removed that promise because a dessert does not need to make a medical or weight-loss claim to have a place in a balanced diet.

Portion size, frequency and the rest of your overall eating pattern matter much more than giving a small dessert a “healthy” label.

Serving ideas

Serve the mini cheesecakes chilled with:

  • fresh raspberries or strawberries
  • a little extra fruit preserve
  • fresh mint
  • a small cup of coffee or tea

They work well as a simple dessert for a family meal or as small individual treats when entertaining.

The bottom line

These mini chocolate cheesecakes are quick to assemble, require no baking and make six small portions.

The combination of chocolate, creamy ricotta and a crisp chocolate wafer gives you the familiar cheesecake idea in a much simpler form.

Sometimes a small, enjoyable dessert is exactly what it needs to be — dessert.

Recipe Notes

This recipe is a modern presentation of the original Mini Chocolate Cheesecake Recipe article on Natural Health Kingdom.

We retained the original ingredient quantities and basic assembly method. We removed the old weight-loss positioning and calorie claim because they weren’t necessary to the recipe and shouldn’t be treated as a health guarantee.
